Easy Split Pea Soup

1 package of dried split peas; rinsed & according to package directions, 14 ounces
7 cups of water
2 Beef bouillon cubes
1 medium Onion, finely chopped
1 cup of gated carrots, 2 to 3
1/2 teaspoon of salt
1/2 teaspoon of black pepper

Combine all the ingredients in a soup pot; mix well. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer for 1 hour, or until the peas are soft and thoroughly cooked, stirring occasionally. Note: To add a traditional smoky ham flavor, stir in 1 teaspoon of liquid smoke (found in the supermarket spice section) after the soup comes to a boil. For a heartier soup, add some chopped deli ham or smoked turkey.
