| Apple-Apricot Chops
2 pounds of pork filets or chops 1 cup of chopped apple 1 cup of chopped dried apricot 1 cup of fresh or dried cranberries ; (optional) 1 medium onion, chopped 2 celery ribs, sliced in 1/2" pieces 1 cup of apple juice 1 cup of brown sugar 1 cup of dry sherry or wine salt & freshly ground black pepper to taste 1 tablespoon of cornstarch ; mixed with 2 tablespoons of cold water |

Combine all ingredients; cover and cook 7 to 9 hours on LOW. A half hour before serving, pour liquid into a separate container to skim off excess fat. Stir in cornstarch mixture and return broth to crock pot. Continue cooking on LOW until smooth and thickened. Makes 4 -6 servings |
