Chicken & Rice Soup
2 tablespoons of butter or margarine
2 carrots, sliced
2 stalks celery, sliced
1/2 cup of chopped green pepper
1 small onion, chopped
4 cups of chicken broth or stock, preferably homemade
1/4 cup of uncooked long grain rice
1 1/2 cups of chopped cooked chicken
1 large tomato, skinned and chopped
salt and pepper to taste
1/2 cup of frozen peas |

Melt the butter in a large saucepan. Add carrots,
celery, green pepper and onion. Sauté for 6 minutes, stirring occasionally.
Add the chicken broth, rice, chicken, tomato, salt and pepper. Simmer for 20
minutes. Add peas, stirring well. simmer for 5 minutes longer or until
heated through. Remove from heat and serve piping hot. Serves 4
