Thai Ginger Chicken Soup

2 cloves of garlic, crushed
1 tablespoon of ginger root, grated
2 teaspoons of lemon grass, ground
1 tablespoon of coriander, ground
1/8 teaspoon of cayenne pepper
1 tablespoon of ghee, or butter
1 chicken, cooked, de-boned, and meat cut into small pieces
14 ounces of unsweetened coconut milk, canned
4 teaspoons of lime juice
2 cups of chicken stock
1 packet of Sweet 'n Low
1/4 cup of fresh cilantro, chopped

In sauce pan, melt ghee on medium heat. Add and sauté garlic, lemon grass, coriander, and cayenne for 1 minute. Add ginger and sauté for 1 minute (careful not to burn!). Add lime juice and sauté for 1 minute. Add coconut milk and chicken and bring to a slow boil. Add chicken stock, cilantro, and Sweet n' Low, simmer 10-15 minutes. Serves 4.
