| Spicy Pork Burritos
Salsa, Guacamole or both 1/2 cup of Barbecue sauce, bottled 1/2 Envelope of taco seasoning mix 1/2 cup of water 2 cups of cooked pork, finely diced 1 cup of lettuce, thinly sliced 1 cup of shredded cheese 1/2 cup of cucumber, seeded, diced 1/2 cup of radishes, sliced 1/2 cup of pitted black olives, sliced 6 large Flour tortillas, to 8 |
| Prepare salsa, guacamole or both. Combine barbecue sauce, taco seasoning and water in Medium saucepan or Microwave bowl. Slowly bring to a boil. Add finely diced cooked pork. Stir to coat. Lower heat and simmer for 15 minutes or Microwave for 3-4 minutes on Medium. Stir occasionally. Arrange lettuce, cheese, cucumber, radish and olive slices on lg. platter. Spoon pork mixture, salsa and guacamole in individual bowls. Heat flour tortillas in foil in oven. Each person assembles his own. Top with pork mixture and fold up.
